my BIG & ONLY goal is to become a better me



i have decided that i will accomplish this goal by breacking it down to smaller goals for differnt aspects of my life some are personal some is one that is not here are some that are not so personal



#1 live simply. live with stuff that i need and use get rid of stuff i dont need.

lesson learned?

we made mexican corn pumpkin soup its a three ingredent recipie 10 oz box of frozen corn 15 oz can of pure pumpkin puree and 1 tsp of chili powder in a med soucepan heat 1 tbsp of evoo over med-high heat add one box of corn thowed and one tsp of chili powder cooking and stirring until fragrent about one minute


stir in one can of pure pumpkin puree and two cups of water season with salt




simmer until thickend slightly about five minutes



then eat



so we did

this is why i personaly need to follow a resipie excatly. when i went to the srore to buy the stuff this morning i didnt read the recipie so i bought the stuff not knowing the amunt of corn or pumpkin needed i just grabed stuff and we didnt use chili pwder we used all spice instead after trying it the firs time we added a packet of chili mix and garlic powder and more salt then pepper it was better then perri added cheese to hers and she liked it better with that we think if you add chicken and bacon it would be better




so make this at your own risk this girl will probably never EVER make it again im sorry mom perri and chelsea that it didnt turn out i got the recipie from the rachel ray magazine and the recipie is fromcaroline wright

a couple weeks ago i did the braided bread recipie you can read it here http://tiffslifeasweknowit.blogspot.com/2011/09/braided-bread.html i made it again today becuse last time it was to doughy in the middle this time i added 7 cups of flour instead of 8 and cooked it for 45 minutes instead of 25 it turned out sooo much better today

pumpkin chocolatechip cookies

we made these yummy cookies (not in the cookbook) all you need are these 3 items spice cake pumpkin and chocolate chips



mix the cake and pumpkin together (no egg or water just cake mix and pumpkin)



then add chocolate chips




greese cookie sheet and place dough on sheet




cook at 325 for 12-14 mintues (waiting for cookies)




let cool




and enjoy

braided bread

so here is the next bread recipie i did i made it this morning here is everything that is needed to make it

combine and let sit foe 10 minutes: 3/4 cup of sugar 2 tbs of yeast 3 cups of waem water (it looks like this)

after 10 minutes add 1/3 cup of oil (vegetable or canola) 1 egg then add 1 tbs of salt 7 to 8 cups of flour (it should look like this)




(my shirt after mixing it all together) add flour till it pulls away from the side let it fise (cover with a towel or plastic wrap) for about an hour




punch down and divide the dough in half then take one half and divide into 3 equal pieces form 3 long snakes the size of your cookie sheet then braid it this makes 2 loafs youDON'T have to braid it you can put it into a loaf pan (2) or make little balls and put into a 9x13 inch pan and make rolls cook at 359 degrees for about 25 minutes *****side note***** mine came out doughy in the middle so you may want to cook it longer then 25 minutes




it is yummy

peasant bread

1 pkg. yeast 2 tsp. salt
2 c. warm water 4 c. flour
1 tbs sugar
stir above ingredents together until dissolved

1/4 tsp basil 1/4 tsp oregano
do not knead

let rise 1 hour covered until doubled in size. flour counter and hands and shape into 2 rounds. let rise for 1 hour brush with soft or melted butter and sprinkle top with garlic salt and parmesan cheese. bake at 425 degrees for 10 minutes then lower heat ti 325 degrees for 15 minutes. remove and brush with melted butter again

now there is a reason that there was only one round of bread in the picture the first round i put on the rack to cook and it started to fall threw the spaces in the racks (the recipie didnt say anything about a pan i highly suggest you use a cookie sheet or pizza pan) and this is what the oven looked like




hooray for me i get to clean the oven now

bbq chicken pizza

10 oz boneless skinless chicken breast cut into cubes, 1 tbs olive oil, 2 tbs barbeque sauce cornmeal, for handeling, 1/2 c more bbq sauce, 2 tbs smoked gouda cheese, shredded, 2 c mozzarella cheese she=redded, 1/4 sm red onion sliced, 2 tbs fresh chooped cilantro, favorite dough for 2 pizzas

cook chicken in olive oil medium-high heat until JUST cooked 5-6 minutes do not over cook chill in refrerator

we stated off with chooping what need to be chopped cindy with the cilantro

perri did chicken

and i did the onion and did i cry when i was cutting it



we got the dough ready while the chicken chilled in the fridge



then we put 2 tbs of bbq suace on the chicken



(still getting dough ready)



then we put 1/4 cup of bbq sauce on dough



chelsea cought on to me i normally take pictures without warning and she smiled in every picture i took and i didnt even warn anyone


then we put on 1 tbs spoon of gouda



1 tbs of cilantro and 3/4 cup of mozzarella cheese





we then put on the chicken and the onion



then we put on more cheese








bake until crisp golden and cheese at center os bubbly 8-10 min





let cool



cut into peices



and enjoy



it was delicious

toffe bars

im ressurecting this blog for the same reasons i started it my goals and as of today im adding this part some friends my mom and i perri & chealsee severson cindy and tiffany (me) taylor got some cookbooks from our stake church group and we decided to cook all the recipies rate them with stars 4 being the best and then blogging about it with the recipie today we made toffee bars recipie submitted by mary van olsen in the eldorado highland ward
ingredients are
2 and ahalf cup flour 2/3 cup brown sugar 2/4 cup butter 1 egg 1 cup nuts (we used choclate coverd almonds becuse those were what was on hand) 1 can sweetend condensed milk 1 & 3/4 cup skor english toffe bits (we used heath bar bites) and added milk chocolate chips
heat oven to 350 in a large bowl combine flour and brown sugar add egg mix well stir in nuts and 1 &1/2 cup chocolate chips reserve 1 1/2 cups mixture press remaining crumb mixture onto bottom of prepared 9x13 inch pan bake for 10 min
pour sweetend condensed milk evenly over hot crust
top with 1 1/2 cup toffee bits sprinkel reserved crumb mixture and remaining 1/2 cup of chocolate chips over top bake 25-30 min until golden brown

it was yummy we gave it 3 stars
